Introduction:
China's Maotai liquor is one of the most famous brands of Chinese specialty wine, using high-end brewing technology production, and has a long history:1 A-grade Maotai liquor is one of the top-quality Maotai liquors, which is produced using relatively perfect manufacturing technology and has a more complex and profound flavor. This paper discusses the best storage length and the hard technical indicators of the 1:1 A-grade Maotai liquor to assist consumers in choosing the most suitable wine for consumption.
Methods:
In this study, we used sensory evaluation and chemical analysis methods to examine the differences in hardness technical indicators between 1:1 A-grade Maotai liquor stored for different years. We compared the acidity, alcohol concentration, and other indicators between different storage years, recorded the responses of 100 sensory evaluators to the taste and aroma after drinking different years of 1:1 A-grade Maotai liquor, and carried out statistical analysis on the obtained data.
Results:
The results of the sensory evaluation showed that the longer the 1:1 A-grade Maotai liquor was stored, the more complex and profound the aroma and taste. When the liquor was stored for 20-25 years, it had the most balanced and rich sensory characteristics, making it the most suitable storage period for it to reach its peak sensory quality. Compared with liquors with the storage period of less than 20 years and more than 25 years, its acidity, alcohol concentration, and other hardness technical indicators reached an-25-year storage period.
Conclusion:
Our research has demonstrated that the best storage length for the 1:1 A-grade Maotai liquor is 20-25 years, which can achieve the balance of sensory characteristics and hardness technical indicators. Consumers can use this research to make informed decisions when purchasing Maotai liquor to ensure the best sensory experience. The results of the study indicate that the sensory and hardness technical indicators can provide important guidance in selecting high-end liquor.
